This Tzatziki Chicken Salad is a refreshing and flavorful dish featuring tender cooked chicken mixed with a creamy Greek yogurt-based tzatziki sauce, fresh herbs, and crunchy vegetables. Perfect for a healthy lunch or light dinner, it can be served on its own, over greens, or in pita for a Mediterranean-inspired meal.

Ingredients

Scale

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber, excess moisture squeezed out
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, peeled and grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Salad

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the Tzatziki Sauce: In a medium bowl, combine the plain Greek yogurt, grated cucumber (with excess moisture squeezed out), fresh lemon juice, grated garlic, chopped dill, chopped parsley, sea salt, and freshly ground black pepper. Stir well until the mixture is smooth and evenly combined.
  2. Combine Salad Ingredients: Add the chopped or shredded cooked chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese to the tzatziki sauce. Stir gently but thoroughly to coat all ingredients evenly with the sauce. Taste and adjust the seasoning by adding more lemon juice, salt, or pepper as needed.
  3. Serve and Enjoy: You can enjoy this salad served over fresh greens, with pita chips, stuffed into a pita pocket, wrapped in a lettuce cup, or as a filling for a sandwich or wrap. For added flavor, consider topping with chopped tomatoes, kalamata olives, extra crumbled feta, or additional fresh herbs.

Notes

  • Squeeze out the cucumber moisture well to avoid a watery salad.
  • Use rotisserie chicken or any leftover cooked chicken to save time.
  • Chill the salad before serving to allow flavors to meld together.
  • Add chopped tomatoes or olives for extra Mediterranean flavor.
  • This salad can be stored in the refrigerator for up to 3 days.
