Ingredients

Scale

Pastry and Filling

  • 1 sheet puff pastry, thawed
  • 1 cup fresh spinach, chopped and sautéed
  • ½ cup crumbled feta cheese
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon dried oregano or dill (optional)

Finishing

  • 1 egg, beaten
  • Flour for dusting the work surface

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté Spinach and Garlic: In a skillet over medium heat, warm the olive oil. Add the minced garlic and cook for about 30 seconds until fragrant. Add the chopped spinach and sauté until wilted. Season with salt, black pepper, and dried oregano or dill if using. Remove from heat and allow the mixture to cool slightly.
  3. Prepare the Puff Pastry: Lightly flour your work surface and roll out the thawed puff pastry into a rectangle approximately 10 by 12 inches.
  4. Assemble Filling: Spread the cooled spinach mixture evenly over half of the pastry sheet. Sprinkle the crumbled feta cheese evenly on top of the spinach.
  5. Fold and Seal: Fold the other half of the pastry over the filling to cover it. Gently press along the edges to seal the pastry. Use a rolling pin to lightly flatten the pastry.
  6. Cut and Twist: Cut the folded pastry into 1-inch wide strips. Twist each strip several times and arrange them on the prepared baking sheet, spacing them slightly apart.
  7. Brush and Bake: Brush the tops of the twists with beaten egg to achieve a beautiful golden finish. Bake in the preheated oven for 15 to 18 minutes, or until the twists are puffed up and golden brown.
  8. Cool and Serve: Remove from the oven and let the twists cool for a few minutes before serving. Enjoy warm or at room temperature.

Notes

  • Make sure the puff pastry is fully thawed for easier rolling and folding.
  • You can substitute fresh spinach with frozen spinach, just be sure to thaw and squeeze out excess moisture before sautéing.
  • For extra flavor, add some grated Parmesan cheese in the filling.
  • Serve these twists as a party appetizer, snack, or a savory addition to brunch.
  • Store leftovers in an airtight container at room temperature for up to 2 days; reheat briefly before serving for best texture.
