Ingredients

Scale

Vegetables

  • 1 pound baby Dutch yellow potatoes
  • 3 ears corn, each cut crosswise into 6 pieces
  • 1 lemon, cut into wedges
  • 2 tablespoons chopped fresh parsley leaves

Protein

  • 1 pound medium shrimp, peeled and deveined
  • 1 (12.8-ounce) package smoked andouille sausage, thinly sliced

Seasonings & Sauces

  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon Old Bay seasoning

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 400 degrees Fahrenheit. Lightly oil a baking sheet or coat it with nonstick spray to prevent sticking during baking.
  2. Boil potatoes and corn: In a large pot of boiling salted water, add the baby potatoes and cook until just tender and parboiled, about 10 to 13 minutes. Stir in the corn pieces during the last 5 minutes of cooking. Drain the potatoes and corn well to remove excess water.
  3. Make butter mixture: In a small bowl, combine the melted butter with the minced garlic and Old Bay seasoning, mixing well to create a flavorful sauce.
  4. Arrange ingredients on baking sheet: Spread the parboiled potatoes, corn, peeled shrimp, and sliced andouille sausage in a single layer on the prepared baking sheet. Pour the butter mixture over everything and gently toss to combine so the flavors coat the ingredients evenly.
  5. Bake the shrimp boil: Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, or until the shrimp are opaque and fully cooked, and the corn is tender.
  6. Serve: Remove from oven and serve immediately garnished with lemon wedges and fresh chopped parsley for a burst of freshness.

Notes

  • Make sure not to overcook the shrimp; they cook quickly once in the oven and become rubbery if overbaked.
  • Using smoked andouille sausage adds a nice smoky flavor; however, you can substitute with any smoked sausage you prefer.
  • To save time, you can boil the potatoes and corn ahead of time and refrigerate until ready to bake.
  • This dish pairs well with crusty bread or a simple green salad to round out the meal.
