Instructions

  1. Heat the Oil: Heat the vegetable oil in a large frying pan or wok over medium heat to prepare for sautéing spices and aromatics.
  2. Sauté Aromatics: Add the minced garlic, chopped green chili, and minced fresh ginger to the hot oil. Cook for about 1 minute until fragrant, releasing their flavors.
  3. Cook Onions: Add the diced onion to the pan and cook for 3-4 minutes, stirring occasionally, until the onions become golden brown and soft.
  4. Add Spices: Stir in turmeric powder, chili powder, ground cumin, ground coriander, and garam masala. Cook the spice mixture for 1 minute to toast and enhance their flavors.
  5. Add Tomatoes and Water: Incorporate the chopped tomatoes and pour in 1/2 cup of water. Season with salt to taste. Cover the pan and bring the mixture to a boil to form the base of the sauce.
