Instructions

  1. Melt the Chocolate: Place 1 cup dark chocolate chips and 1 tbsp coconut oil in a medium bowl. Microwave in 30-second increments, stirring thoroughly between each, until the chocolate mixture is smooth and creamy.
  2. Combine Chocolate and Quinoa: Stir 2 tbsp peanut butter and 3 tbsp quinoa crisps into the melted chocolate mixture. Set aside to cool slightly.
  3. Prepare Peanut Butter Filling: In a small bowl, mix 1/3 cup peanut butter with 1 tbsp maple syrup until smooth.
  4. Thicken Filling: Gradually fold in 1 tbsp coconut flour into the peanut butter and maple syrup mixture. Continue folding until the mixture starts to thicken and holds shape.
  5. Create Base Layer: Add about 1/2 tbsp of the chocolate and quinoa mixture into silicone cupcake liners, spreading it evenly as a base.
