Main Ingredients
- 2 tablespoons vegetable oil
- 1 yellow onion, chopped
- 2 cloves garlic, minced
- 3/4 cup uncooked white rice
- 1 1/2 cups chicken broth
- 14 ounces canned diced tomatoes with chilis
- 2 teaspoons ground cumin
- 2 teaspoons turmeric
- 1 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 1/4 teaspoon cayenne pepper
- 30 ounces canned black beans (2 cans), drained and rinsed
- Heat the oil: Add the vegetable oil to a pot over medium-high heat to prepare for sautéing the aromatics.
- Sauté onions and garlic: Add the chopped yellow onion and minced garlic to the pot. Cook, stirring occasionally, for about 4 minutes until they become soft and fragrant.
- Add rice: Stir in the uncooked white rice and cook it for 2 minutes to lightly toast it and enhance its flavor.
- Simmer with liquids: Pour in the chicken broth and canned diced tomatoes with chilis. Bring the mixture to a boil. Once boiling, reduce the heat to a low simmer, cover the pot, and cook for 20 minutes to let the rice absorb the liquid and cook through.
- Season and combine: Add the ground cumin, turmeric, kosher salt, black pepper, cayenne pepper, and drained black beans to the pot. Stir gently to combine all ingredients evenly with the cooked rice.
Notes
- Use white rice for the best texture, as brown rice will require a longer cooking time.
- Drain and rinse the canned black beans to reduce sodium content and improve flavor.
- Adjust cayenne pepper to taste for desired spice level.
- For a vegan version, substitute chicken broth with vegetable broth.
- This recipe can be served as a main dish or a side to grilled meats or vegetables.
