Instructions

  1. Prep Onions: Slice the onions into ½-inch thick rings and carefully separate into sturdy layers suitable for stuffing. Choose the larger, intact rings for best results.
  2. Make Filling: In a bowl, mix together softened cream cheese, shredded sharp cheddar, finely diced jalapeños, and any optional ingredients like bacon bits, garlic powder, and chopped scallions. Chill the mixture for 10 minutes to firm up.
  3. Stuff Rings: Spoon or pipe the cheese and jalapeño filling into the center of each onion ring, smoothing the edges for neatness and ensuring the filling is secure.
  4. Freeze: Arrange the stuffed onion rings on a parchment-lined tray and freeze them for 20 to 30 minutes. This helps the filling set and prevents it from leaking during frying.
  5. Bread Rings: Prepare a breading station. Dredge each frozen stuffed onion ring in all-purpose flour, dip it into beaten eggs, and then coat it with seasoned breadcrumbs or panko. For extra crunch, repeat the egg dip and breadcrumb coating step once more.
