Ingredients

Scale

Chicken

  • 4 pieces Chicken Breasts (boneless, skinless)

Cheese

  • 8 oz Boursin Cheese (substitute with cream cheese or herbed goat cheese if desired)

Breading & Herb Mixture

  • 1 cup Panko Breadcrumbs (regular breadcrumbs can be used but won’t deliver the same crunch)
  • 1/2 cup Parmesan Cheese
  • 1/4 cup Fresh Parsley (or 1 tsp dried parsley)
  • 1 tbsp Fresh Thyme (or 1 tsp dried thyme)
  • 1 tbsp Fresh Rosemary (or 1 tsp dried rosemary)
  • 1 tsp Garlic Powder (adjust to taste)
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper

Oils & Butter

  • 2 tbsp Olive Oil
  • 2 tbsp Melted Butter

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a baking dish to prepare for the chicken.
  2. Prepare Herb-Crumb Mixture: In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, chopped fresh parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper. Mix thoroughly to evenly distribute the herbs and seasonings.
  3. Prepare Chicken Pockets: Carefully slice pockets into each chicken breast, being cautious not to cut all the way through to create a cavity for the cheese.
  4. Stuff with Cheese: Stuff each chicken pocket generously with Boursin cheese, pressing it securely inside to prevent the cheese from leaking out during baking.
  5. Secure the Chicken: If needed, use toothpicks to close the pockets, ensuring the cheese stays inside while cooking.
  6. Coat Chicken with Oil and Herb Crumbs: Brush each stuffed chicken breast all over with olive oil, then evenly coat with the breadcrumb and herb mixture, pressing firmly to help the crumbs adhere.
  7. Arrange for Baking: Place the coated chicken breasts into the prepared baking dish. Drizzle the melted butter evenly over the top for added flavor and a golden crust.
  8. Bake: Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  9. Rest and Serve: Remove the chicken from the oven and let it rest for a few minutes. Take out any toothpicks before serving to ensure safety.

Notes

  • Substitute Boursin cheese with cream cheese or herbed goat cheese if preferred.
  • Using panko breadcrumbs is recommended for a crispier crust; regular breadcrumbs can be used but will yield a softer texture.
  • Make sure to not cut the chicken breasts entirely through when creating pockets to keep the cheese inside while baking.
  • Letting the chicken rest after baking helps the juices redistribute for a more tender bite.
  • Check the internal temperature with a meat thermometer to ensure food safety.
