Ingredients

Scale

Chicken Patties

  • 1 lb ground chicken breast
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Olive oil cooking spray or avocado oil cooking spray
  • 1 cup cornflakes
  • 1 tsp onion powder (for coating)
  • 1 tsp garlic powder (for coating)
  • 1 tsp paprika (for coating)

Assembly

  • ¼ cup light mayonnaise
  • 3 brioche buns, lightly toasted
  • Shredded iceberg lettuce, small handful per sandwich

Instructions

  1. Preheat Oven or Prepare Air Fryer: If baking in an oven, preheat to 390°F (200°C) fan forced, or 450°F (225°C) conventional. Alternatively, preheat your air fryer to 375°F (190°C).
  2. Season Chicken: In a mixing bowl, combine ground chicken with ½ tsp salt, ½ tsp pepper, 1 tsp onion powder, and 1 tsp garlic powder. Mix until spices are fully incorporated.
  3. Form Patties: Divide the mixture into three equal portions (~1/3 lb or 150g each). Wet your hands slightly to prevent sticking, then shape each portion into a ball.
  4. Prepare Coating: In a high-speed blender, pulse 1 cup cornflakes with 1 tsp onion powder, 1 tsp garlic powder, and 1 tsp paprika until finely ground.
  5. Coat Patties: Spread the cornflake seasoning on a plate. Roll each chicken ball on the coating, then flatten into a round patty shape, ensuring full coverage.
  6. Place on Baking Sheet: Arrange patties on a baking sheet lined with parchment paper or a silicone mat. Lightly spray the exterior of each patty with olive or avocado oil spray to promote browning.
  7. Cook Patties: Air fry patties at 375°F (190°C) for 12-15 minutes, or bake in the preheated oven at 390°F (200°C) fan forced for 18-22 minutes (or 450°F (225°C) conventional). Cook until internal temperature reaches 165°F (74°C) and coating is golden brown.
  8. Toast Brioche Buns: Lightly toast the inside halves of brioche buns in a pan with a light spray of avocado or olive oil for added flavor and texture.
  9. Assemble the Sandwich: Spread 1 tablespoon of light mayonnaise on the bottom half of each toasted brioche bun. Add the cooked McChicken patty, followed by a small handful of finely shredded iceberg lettuce. Spread 1 tablespoon of light mayonnaise on the top half of the bun and place it over the lettuce to complete the sandwich.

Notes

  • Wetting your hands before shaping patties helps prevent sticking.
  • Cooking times may vary depending on your oven or air fryer model; always use a meat thermometer to check for doneness.
  • You can substitute cornflakes with gluten-free flakes for a gluten-free version.
  • For extra flavor, consider adding a dash of cayenne pepper to the coating mix.
  • Allow patties to rest a few minutes after cooking to retain juiciness.
