Dough
- 4 1/2 tablespoons unsalted butter
- 2 tablespoons minced garlic
- 3 1/2 cups + 1 tablespoon all-purpose flour
- 3 tablespoons chopped fresh parsley
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup whole or 2% milk, warmed to 110°F
- 1 large egg, room temperature
Topping and Finishing
- 1 beaten egg, for brushing the tops
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt, for finishing
- Prepare the baking pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set it aside to ensure the rolls don’t stick during rising and baking.
- Make garlic butter for dough: In a small pot, melt 4 1/2 tablespoons unsalted butter and add 2 tablespoons minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat and allow it to cool while you prepare the other ingredients.
- Mix and knead dough: In a stand mixer bowl, combine the 3 1/2 cups plus 1 tablespoon of all-purpose flour, chopped fresh parsley, granulated sugar, instant yeast, and sea salt. Add the warmed milk, large egg, and the cooled garlic butter mixture. Using the dough hook attachment, knead on low speed until the dough looks smooth, soft, and slightly tacky, about 10-12 minutes. Add additional flour one tablespoon at a time if the dough is too sticky.
- Shape the rolls: Divide the dough into 12 equal portions (about 67 grams each). Shape each portion into a smooth ball, pinching the bottom seam to keep it tight. Place the dough balls in the prepared pan, cover with plastic wrap or a clean towel, and let them rise in a warm place until doubled in size, approximately 1 to 2 hours.
- Preheat the oven: Once the rolls have risen, preheat your oven to 350°F (180°C) to prepare for baking.
- Apply egg wash and bake: Brush the tops of the risen rolls with the beaten egg to give them a beautiful golden color during baking. Bake the rolls for 20-30 minutes, or until the tops turn a rich golden brown.
- Prepare garlic butter topping: While the rolls are baking, melt 2 tablespoons unsalted butter in a small pot. Add 1 tablespoon minced garlic and cook for 1-2 minutes until fragrant, then remove from heat and stir in 1 tablespoon chopped fresh parsley.
- Finish and serve: Remove the rolls from the oven and immediately brush them generously with the garlic butter mixture. Sprinkle flaky sea salt on top if desired. Serve the rolls warm for best flavor and texture.
Notes
- When measuring flour, spoon it lightly into your measuring cup and level it off with a knife for accuracy.
- If the dough feels too sticky during kneading, add flour one tablespoon at a time to achieve a soft but workable texture.
- For a softer crust, brush rolls with melted butter instead of egg wash before baking.
- Use a kitchen scale to weigh dough portions for even-sized rolls and consistent baking.
- These rolls are best enjoyed fresh but can be stored in an airtight container for up to 2 days or frozen for longer storage.
