Ingredients

Scale

Wraps

  • 2 wraps (Flour or Spinach; whole wheat or low-carb variants recommended)

Filling

  • 1 cup Cottage Cheese (substitute with ricotta or Greek yogurt if desired)
  • 1 medium Cucumber (sliced or julienned)
  • 1/4 cup Red Bell Pepper (finely chopped, optional)
  • 1/4 cup Fresh Dill or Parsley (chopped; can swap for basil or cilantro)
  • Salt and Pepper (to taste)
  • 1 tablespoon Lemon Juice (or white vinegar/apple cider vinegar)
  • 1/2 teaspoon Garlic Powder (or 1 small clove minced, optional)

Instructions

  1. Prepare the Cottage Cheese Mixture: In a medium bowl, combine the cottage cheese with chopped dill or parsley, lemon juice, salt, pepper, and garlic powder if using. Mix thoroughly until all ingredients are evenly blended.
  2. Lay Out the Wraps: Place the wraps flat on a clean surface, ensuring they are ready for filling.
  3. Spread the Filling: Evenly spread a generous layer of the cottage cheese mixture across each wrap, covering most of the surface but leaving some space on the edges.
  4. Add the Vegetables: Arrange the cucumber slices along the center of each wrap. Sprinkle the finely chopped red bell pepper or other optional veggies on top of the cucumbers for added crunch and flavor.
  5. Roll the Wraps: Starting from the edge closest to you, tightly roll each wrap while folding the sides inwards to encase the filling securely.
  6. Slice and Serve: Cut each wrap in half diagonally. Serve immediately for best freshness, or store wrapped in the fridge for up to 24 hours.

Notes

  • You can substitute cottage cheese with ricotta or thick Greek yogurt for a different texture and flavor.
  • Try different herbs like basil or cilantro to vary the flavor profile.
  • Add other vegetables such as grated carrots, sliced avocado, or sprouts to customize your wrap.
  • For a low-carb option, use low-carb or whole wheat wraps.
  • Wraps are best enjoyed fresh but can be stored refrigerated for up to 24 hours to maintain crispness.
