Ingredients

Scale

Chicken Marinade

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1/4 cup teriyaki sauce
  • 1 tbsp sesame oil (divided)
  • 1 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Coleslaw

  • 2 cups coleslaw mix (cabbage and carrots)
  • 2 green onions, thinly sliced
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1/2 tbsp sesame oil (from the divided amount)

Wonton Tacos

  • 12 wonton wrappers
  • Oil for frying (about 1 cup, vegetable or canola oil recommended)
  • 2 tbsp sweet chili sauce
  • 1 tsp sesame seeds
  • 2 tbsp chopped cilantro

Instructions

  1. Marinate Chicken: In a bowl, combine thinly sliced chicken breasts with teriyaki sauce, 1/2 tablespoon sesame oil, low-sodium soy sauce, minced garlic, and grated fresh ginger. Mix well and let it marinate for 10 minutes to absorb the flavors.
  2. Cook Chicken: Heat a skillet over medium heat. Add the marinated chicken and cook for 5 to 7 minutes, stirring occasionally, until the chicken is fully cooked and slightly caramelized. Remove from heat and set aside.
  3. Prepare Coleslaw: In a separate bowl, toss together the coleslaw mix, thinly sliced green onions, rice vinegar, honey, and the remaining 1/2 tablespoon of sesame oil until well combined.
  4. Fry Wonton Wrappers: Heat about 1 inch of oil in a skillet to medium-high heat. Fry each wonton wrapper for 20 to 30 seconds on each side until they turn golden brown and crispy. Remove and drain on paper towels to remove excess oil.
  5. Assemble Tacos: Place a fried wonton wrapper flat on a plate. Fill each with a portion of cooked chicken and a spoonful of the prepared coleslaw. Drizzle with sweet chili sauce for added sweetness and heat.
  6. Garnish and Serve: Sprinkle each taco with sesame seeds and chopped cilantro for a fresh, nutty finish. Serve immediately while the wontons are crispy.

Notes

  • To keep wonton wrappers crispy, assemble tacos just before serving.
  • Use a thermometer to maintain oil temperature around 350°F for perfect frying.
  • Substitute chicken with tofu for a vegetarian variation.
  • Adjust sweet chili sauce quantity to taste for more or less spiciness.
