4.6 from 127 reviews

This classic French crêpe recipe is quick, easy, and yields thin, delicate crêpes perfect for sweet or savory fillings. Made with simple pantry ingredients, these crêpes have a smooth, tender texture and cook evenly in a hot skillet or crêpe pan.

Ingredients

Scale

Ingredients

  • 250 g de farine (all-purpose flour)
  • 4 œufs (eggs)
  • 50 cl de lait (milk)
  • 1 pincée de sel (pinch of salt)
  • 2 cuillères à soupe de sucre (2 tablespoons sugar)
  • 50 g de beurre fondu (melted butter)

Instructions

  1. Préparation de la pâte: In a large mixing bowl, combine the flour, salt, and sugar. Make a well in the center and crack the eggs into it.
  2. Incorporation du lait: Gradually add the cold milk while gently mixing to avoid lumps. Continue stirring until the batter is smooth and fluid. Add a bit more milk if the batter seems too thick.
  3. Ajout du beurre fondu: Pour the cooled melted butter into the batter and mix well to incorporate thoroughly for an even consistency.
  4. Cuisson des crêpes: Heat a crêpe pan or non-stick skillet over medium heat. If the pan is not non-stick, lightly grease it with oil or butter. Pour a small ladle of batter into the pan and tilt it to spread the batter evenly into a thin layer.
  5. Cuisson et retournement: Cook the crêpe until the edges turn golden brown. Use a spatula to gently loosen the edges, then flip the crêpe and cook the other side for about 1 more minute. Remove and repeat with the remaining batter.

Notes

  • For sweeter crêpes, increase the sugar slightly or add vanilla extract to the batter.
  • Let the batter rest for 30 minutes if time allows to improve texture and reduce bubbles.
  • Use a non-stick pan or well-seasoned crêpe pan for easier flipping.
  • Serve with classic fillings like Nutella, lemon juice and sugar, fresh fruit, or savory options like ham and cheese.
  • The batter can be made a few hours ahead and refrigerated; just whisk before cooking.
