Vinaigrette Ingredients
- 2 tablespoons mayonnaise
- 2 tablespoons Parmesan cheese
- 2 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- 1 small garlic clove, finely minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup extra virgin olive oil
- 2 tablespoons water
- Combine Ingredients: Add all ingredients except the extra virgin olive oil to a blender or a wide-mouth mason jar.
- Blend: Pulse the blender a few times to begin mixing the ingredients. If using a mason jar, use an immersion (stick) blender to mix well.
- Incorporate Oil: Gradually add the olive oil in a slow stream while blending, allowing the dressing to emulsify and become creamy.
- Store: Transfer the creamy vinaigrette to an airtight container or mason jar and refrigerate. The dressing will keep fresh for up to 5 days when stored properly.
Notes
- Use fresh garlic for the best flavor and finely mince it to avoid large chunks.
- You can adjust the amount of red pepper flakes depending on your preferred spice level.
- Shake or stir the dressing before each use as separation may occur.
- This vinaigrette works great as a salad dressing or a dip for vegetables and bread.
- If you prefer a thinner consistency, add a little more water or vinegar to taste.
