  • juice of 1 lemon (23 tablespoons)
  • 1 (15 ounce) can chickpeas, rinsed and drained

Instructions

  1. Prepare the base mixture: Add tahini, cold water, olive oil, cumin, salt, garlic, and lemon juice to a food processor. Puree the ingredients until the mixture is smooth and creamy, ensuring the flavors are well combined.
  2. Add chickpeas and blend: Add the rinsed and drained chickpeas to the food processor. Puree for 3-4 minutes, pausing halfway to scrape down the sides of the bowl, until the hummus is completely smooth. If the texture is too thick, add another tablespoon or two of cold water to achieve your desired consistency.
  3. Season to taste: Taste the hummus and adjust seasoning by adding additional salt, cumin, and/or lemon juice as needed to enhance the flavors perfectly.
  4. Serve and garnish: Serve the hummus immediately topped with your choice of optional toppings such as an extra drizzle of olive oil, chopped fresh parsley, a sprinkle of ground sumac or paprika, or toasted pine nuts. Alternatively, transfer the hummus to a sealed container and refrigerate for up to 3 days for later enjoyment.
