Ingredients

Scale

Chicken

  • 1 lb boneless skinless chicken breasts, diced
  • 1 tbsp Cajun seasoning (adjust to taste)
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp olive oil (for sautéing)

Vegetables & Aromatics

  • 1 cup diced onions (fresh is best)
  • 2 cloves garlic, minced
  • 1 cup diced bell pepper (optional)

Orzo & Dairy

  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated

Garnish

  • Fresh parsley (optional)

Instructions

  1. Heat oil and sauté chicken: Warm 1 tablespoon of olive oil in a large pot over medium heat until shimmering. Add the diced chicken seasoned with Cajun seasoning, salt, and pepper. Cook for 5-7 minutes until the chicken is golden brown and cooked through.
  2. Set chicken aside: Remove the browned chicken from the pot and set aside, leaving the flavorful bits in the pot to build more flavor.
  3. Sauté aromatics and vegetables: Add diced onions and minced garlic to the same pot and cook until fragrant, about 2-3 minutes. If using, stir in the diced bell pepper and cook briefly.
  4. Add orzo, broth, and cream: Stir in the orzo pasta, chicken broth, and heavy cream. Bring the mixture to a gentle boil over medium heat.
  5. Simmer the orzo: Reduce the heat to low, cover the pot, and let it simmer for 10-12 minutes. Stir occasionally until the orzo is tender and has absorbed most of the liquid.
  6. Combine chicken and cheese: Stir the cooked chicken and grated Parmesan cheese into the orzo mixture until creamy and well combined. Taste and adjust salt and pepper as needed.
  7. Serve and garnish: Spoon the creamy Cajun chicken Alfredo orzo into bowls and garnish with fresh parsley if desired. Serve warm and enjoy!

Notes

  • You can adjust the Cajun seasoning to make the dish more or less spicy according to your preference.
  • Bell peppers are optional but add sweetness and color; you can substitute with other vegetables like mushrooms or spinach.
  • Using fresh Parmesan cheese enhances the flavor and creaminess; pre-grated can work in a pinch.
  • Make sure to stir occasionally while simmering to prevent the orzo from sticking to the bottom of the pot.
  • This dish can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop with a splash of cream or broth.
