Yogurt Mixture
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
- Prepare the Yogurt Mixture: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until all ingredients are evenly incorporated.
- Form the Clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture at a time and place them onto a baking sheet lined with parchment paper, shaping them into clusters. You should be able to make around 10 clusters.
- Freeze the Clusters: Place the baking sheet with the yogurt clusters into the freezer. Allow them to freeze completely and become solid, which should take about 1 to 2 hours.
- Melt the Chocolate: Add the semi-sweet chocolate chips and coconut oil into a microwave-safe bowl. Microwave in intervals of 15 to 30 seconds, stirring between each interval, until the chocolate is fully melted and smooth.
- Coat the Frozen Clusters: Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate, ensuring they are thoroughly coated. Place each chocolate-covered cluster back onto the prepared baking sheet. Optionally, sprinkle a little sea salt on top to enhance the flavor.
- Re-freeze to Set: Return the coated clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to firm up a bit more. Once set, they are ready to enjoy!
Notes
- Be sure to freeze the yogurt clusters completely before dipping to avoid melting the chocolate prematurely.
- If desired, you can substitute honey with maple syrup or agave syrup for a vegan option.
- Use high-quality chocolate for the best flavor and smooth coating.
- These clusters are best enjoyed within 2 days for the freshest taste and texture.
- Adding a sprinkle of sea salt on the chocolate adds a nice flavor contrast but is optional.
