  • 1 1/2 lb Springer Mountain Farms chicken breast
  • 1 1/2 tsp paprika (OliveNation)
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder (OliveNation)
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Pasta

  • 12 oz gluten free farfalle pasta

Sauce

  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil Pasta: In a large pot, bring water to a boil and cook the gluten-free farfalle pasta according to the package directions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
  2. Mix Chicken Seasonings: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper to create the chicken seasoning blend.
  3. Prepare Chicken: Pound the chicken breasts to slightly thin them out for even cooking. Season both sides evenly with the prepared seasoning mixture.
  4. Sear Chicken: Heat olive oil in a large skillet over medium heat until hot. Sear the chicken breasts for 5 minutes on each side until browned.
  5. Simmer Chicken: After searing, reduce heat to medium-low, cover the pan with a lid, and cook the chicken for an additional 10-12 minutes until the internal temperature reaches 165°F (74°C). Remove the chicken from the pan and place on a cutting board.
  6. Melt Butter: Add butter to the same skillet and let it melt over medium heat.
  7. Sauté Aromatics and Seasonings: Once the butter has melted, add dry shallots, garlic powder, and Italian seasoning. Stir and simmer for one minute to release the flavors.
  8. Make Roux: Sprinkle in the gluten-free flour and stir continuously to combine, scraping the bottom of the pan to incorporate all bits.
  9. Add Liquids: Slowly pour in the chicken broth and heavy cream while whisking to form a smooth, creamy sauce base.
  10. Add Cheese: Stir in the shredded parmesan cheese until fully melted and incorporated into the sauce. Allow to cook, stirring occasionally, until the sauce reaches the desired consistency.
  11. Combine Pasta and Sauce: Add the cooked pasta to the sauce and toss well to coat evenly. Add reserved pasta water one tablespoon at a time to thin the sauce as needed.
  12. Slice Chicken: Slice the rested chicken breasts into strips or bite-sized pieces.
  13. Finish Dish: Add the sliced chicken to the pasta mixture, gently stir to combine, then serve immediately for a delicious and creamy chicken garlic Parmesan pasta experience.

Notes

  • You can substitute gluten-free farfalle with any other gluten-free pasta shape.
  • Ensure chicken is cooked to an internal temperature of 165°F for food safety.
  • Adjust the amount of pasta water to achieve your preferred sauce consistency.
  • Use freshly grated parmesan for best flavor and melting quality.
  • To reduce calories, substitute heavy cream with half-and-half, noting it will slightly alter the richness.
