Ingredients

Scale

Puff Pastry

  • 2 sheets of square-shaped puff pastry

Fillings

  • 2 tablespoons honey
  • 100 grams blue cheese, crumbled
  • 100 grams grated Parmesan cheese
  • 50 grams walnuts, chopped
  • 68 sprigs fresh thyme leaves
  • Sea salt, to taste
  • Cracked black pepper, to taste

Finishing

  • 1 tablespoon milk (for brushing)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F). If you are using an electric non-fan-forced oven, increase the temperature to 200°C (390°F) for optimal baking.
  2. Prepare Puff Pastry: Lay out each sheet of puff pastry and drizzle 1 tablespoon of honey evenly over each sheet to impart a subtle glaze and sweetness.
  3. Add Toppings: Divide the chopped walnuts, crumbled blue cheese, and grated Parmesan cheese evenly over each sheet of puff pastry. Sprinkle fresh thyme leaves on top and season with sea salt and cracked black pepper to enhance flavors.
  4. Roll and Cut: Carefully roll up each sheet of pastry tightly. Then, cut each rolled sheet lengthwise in half. Tuck the pastry edges in after cutting to keep the filling securely inside the rolls.
  5. Twist and Shape: Place the cut lengths on a sheet of baking paper. Twist each length carefully to expose the layers and fillings, then shape each twisted strip into a round coil or spiral.
  6. Brush with Milk: Lightly brush the tops of the shaped pastry coils with milk to help them brown beautifully during baking.
  7. Bake: Place the coils in the preheated oven and bake for 25-30 minutes or until the pastry is puffed, golden brown, and cooked through.
  8. Garnish and Serve: Remove the pastries from the oven, scatter extra fresh thyme leaves on top for aroma and presentation, and serve warm as a delightful appetizer or snack.

Notes

  • For a crisper texture, place the pastries on a preheated baking tray before baking.
  • Ensure your puff pastry is well-chilled before starting to make the rolling and twisting easier and more manageable.
  • You can substitute walnuts with pecans or almonds for a different nutty flavor.
  • Store any leftovers in an airtight container and reheat briefly in the oven to maintain flakiness.
  • Adjust the amount of blue cheese to your taste, as it has a strong flavor.
